Italian restaurants are associated with traditional dishes mainly. Only slight modern flair is added. Are chefs so conventional in Italy? Not at all. They just meet the demands of customers who prefer traditional cuisine. In the opinion of Cristina Bowerman, the owner of Glass Hostaria,  traditional cuisine gives a feeling of safety to Italians. Romans are mainly traditionalists therefore appearance of her restaurant Glass Hostaria became a fresh breeze for Rome. As you understand the opening of ultra-modern venue was rather risky but Christina still made an endeavor. It was accepted with suspicion first but with time Romans accepted it willingly.

Cristina Bowerman spent 14 years in Texas before she returned to Rome. She has Italian roots and she follows cardinal kitchen rules but the innovative approach to cooking still prevails.  She worked in different dining venues in USA, so she was long under the influence of international cuisine. There she acquired rich experience that helps to improve trad Italian dishes. Such things inspire and give impulse to create.

All clients receive surprisingly warm service in Glass Hostaria.  Christina Bowerman comes up to the guests and asks about their impressions and wishes. The interior features contemporary design decorated with modern materials such as glass, steel etc. The planning of the restaurant was made by the architect from Rome Andrea Lupacchini with assistance of Marco Filippetti and Alberto Brandolini. Many magazines and books published the design, which even received international awards.

Ask to bring rack of lamb and lobster salad – these dishes are hits. The portions are big enough. The recommended dishes are tagliatelle pasta with eggplant, scallops with brussels sprouts, lentils, and radishes in dashi broth. Oenophiles like this venue for the choice of wines. There are about 600 labels in the menu.

The dinner in the venue will cost you about € 80. There are tasting menus as well that range from €75 to €100.
