Sushi Yasuda is a Japanese restaurant that was founded in 1999. It is located between Third Avenue and Second Avenue in Midtown Manhattan, New York City. The main concept of the place is to show traditional sushi making. There are three co-owners there: a chef, a restaurant manager and a business manager. They worked hard to create a place with ideal reputation. In 2000, the restaurant was rated three starts by William Grimes, the restaurant critic of New York Times. Naomichi Yasuda, a master sushi chef, entrusted sophisticated sushi making process to his disciples and returned to Japan. In Tokyo Yasuda opened a new 8-seat restaurant.
Sushi Yasuda had not lost its charm without Yasuda. You can still find fish that is hard to find in other places. It is brought from Japan and other countries of the world, and it is perfect. The rice is prepared in exact proportions at calculated temperature to get superb quality. The cooking approach is almost scientific in Sushi Yasuda. The process was refined as if meals are prepared in the lab.
This is a great place to observe sushi master at work. You can do it sitting at the counter. Ask for omakase and enjoy the dish. There is intrigue over this tradition to leave the selection to the chef. It gives you the chance to try the best dishes in the restaurant at a reasonable price.
There are 8 levels of fattiness in fish. It is even hard to guess how the chef can distinguish them, which is a part of daily routine for Yasuda chefs. They make fish melt on the tongue. High fat tuna is good for such dish. This is hagashi toro that requires special complicated and masterful cutting technique.
