In 1991, the sisters Paula and Patrizia Persiani took over the family business from their parents. The chef of the place, Giuseppe Ruzzeto, is also a member of the family – he is Patrizia’s husband. Finely prepared meals excite general admiration, so Giuseppe has to leave the kitchen to take compliments from the guests. The visitors love to order rigatoni alla carbonara, served here at a low price – just €9. The tripe cooked in a delicate tomato sauce costs just €12 (trippa alla romana).
The starters offered in the restaurant: sliced mountain ham, cheese Lazio, and focaccia appetizers prepared in the oven. Then you can order potato gnocchi with mutton, the rigatoni alla carbonara, bucatini amatriciana or lasagna. The fish is always fresh. There are hundreds of labels in a wine cellar.
Only highly quality ingredients are used to prepare the dishes. The traditional way of cooking is a secret of delicious meals. The wood oven is often used for cooking. The peculiarity of wood oven cooking makes the roasts unique. Pizza is cooked in the oven and it is one of the best in Rome! A wood-fired oven cooks pizza and gourmet meals faster than conventional ovens. Only traditional Italian stove can provide a thin crispy crust with a soft middle and excellently prepared toppings. It becomes possible thanks to quick baking. La Tavernaccia makes the most of this technique.
