République is the place where guests can try dishes of French bistro cuisine. The restaurant is located in the classic building of Los Angeles, which was erected in 1929 by Charlie Chaplin. The chef of the restaurant is Walter Manzke who works with his wife Margarita. She specializes on baking breads and desserts.

There is a casual bar and bistro in République that makes the spot bustling and popular among locals. République is definitely French. Walter Manzke features polished, modern cooking. Walter Manzke worked in many places but République became the culmination of his career.

Some people consider that the best French fries in Los Angeles can be found there. They are long, accurate and are always made of fresh potatoes. The chef steams them first then dehydrates in the oven at a low temperature and finally boils in a mixture of beef suet and peanut oil that makes potatoes crisp. As a result, we can enjoy great French fries that is better to combine with herb-frosted New York steak that is also served in République.

Walter Manzke practices sustainability and employs seasonal cuisine. He has been eaten organic food from the early childhood. All products were from farm long before it became a popular trend. The trend of seasonal, organic food was always a part of Walter’s career. Now it is a part of his signature style that he brought to République.

Thanks to the best local ingredients, Manzke tries to achieve the best result for pleasure of his customers who come to the restaurant for delicious meals, and relaxed atmosphere. The environment is refined. There are communal, long tables in the dining room where diners eat the meals with pleasure.

You can see the half of the kitchen from the dining room. The other half is hidden. There is always a hive of activity in it. The bar is located in the center of the restaurant, not at the side as it usually happens. The dining room faces remarkable façade of Gothic stonework that creates special atmosphere in the dining room. It is great to look at while you eat the dishes.  The place features tall glass windows, high ceilings and hardwood floor.

The starters and salads vary from $11-19. The pasta costs $19 minimum, the highest price is $36. Fish and meat vary $14 – $39. The desserts are around $11.

There are private dining options in The Left Bank Wine Room when you can look at the stone wall on one side and wine cellar on the other. It accommodates to 18 people.

The Right Bank Mezzanine Room is semi private and overlooks the Main Dining Room. There are three tables for 12 people close to each other. Different seated configurations are possible for up to 30 people (seats) and up to 45 if you have large standing receptions. There is a dining room for 60 people, where you can see custom chandeliers and oversized mirrors. Alcove is a romantic place for small companies up to 5 people. Bar can be reserved for standing reception. It can accommodate up to 30 people.

People can get breakfast and lunch in the bakery of République. The pastries and are sold there and at the café.
