La Pergola is undoubtedly one of the best venues in Rome. It can even be included to the list of the best restaurants of Italy. This restaurant has 3 Michelin stars, so it is worth trying! There are more than 60,000 bottles of 3500 labels in the wine cellar, and some of them are cult wines. The oldest bottles date back to 1888.
The chef Heinz Beck is from Germany but he adores Italian cuisine. Only the best ingredients are used for cooking. There is a good selection of olive oils and vintage balsamic vinegars to excite tastes of the most demanding gourmets.
The owners tried hard to create welcoming ambience, so the interior was devised thoroughly with this concept in mind. Every detail is thought out including cutlery and vermeil plates. Classic art treasures surround the diners as if emphasizing artful approach in preparation of meals. You will feel special in the dining room with 18-century candelabra, hand-blown expensive glass items crafted by Emile Gallé, 17th century celadron vase and other valuable items around. The exclusiveness of the venue can be enjoyed at full at Cigar Lounge. Observe oriental masterpieces there savouring a cigar along with delicious vintage liquor. Fresh flower arrangements decorate the dining room. Master florist of the hotel cares about it on a regular basis.

The American Academy of Hospitality Sciences marked the work of the restaurant with “Five Star Diamond Award”.
7 course menu starts with €110. Be ready to pay €220 for 9 course menu. The gourmet menu includes such dishes as King prawns in tempura on purée of fried squids and Braised veal cheek with curly endive, burrata and spicy popped rice.
The recommended dishes are Duck foie gras with apple, almond and amaretti (€45), Tangerine risotto with scampi carpaccio and mint (€49), Fagottelli “La Pergola” (€45), and Crépinette of pigeon and duck foie gras on mustard sauce (€56).
